To all who are in need of a warm-fall-feel-good-feeling in the midst of this election day, here's a recipe-
Pumpkin Cookies:
(makes aprox 3 dozen)
*Mix together 1 cup sugar, 1 cup pumpkin, 1/2 cup oil, and one egg.
*Add 2 cups flour, 1/2 tsp salt, 1 tsp cinnamon, 1/2 tsp cloves, 1/2 tsp nutmeg, and tsp baking powder.
*In a small dish disolve together 1 tsp baking soda, 1 tsp milk and 1 tsp vanilla. Add to other ingredients.
*Stir in 1/2 bag chocolate chips (or more if you're cooking them for my Kevin :D) and 1/2 cup nuts (optional...I think it's just as good without them)
*Drop by rounded tbsp onto a lightly greased cookie sheet.
Cook for 8-10 minutes at 375.
(They are better undercooked and slightly gooey than overcooked! Try your first batch for 8 minutes- even if they don't look quite done- and see how you like it)

PS- I made them and I LOVED them. In fact, I must give some away so I don't over-indulge...
I made some with raisins and some with butterscotch chips. The butterscotch was surprisingly yummy.
BEST pumpkin cookies I've ever made!!
